Leftover turkey after Thanksgiving creates a great salad. That is if you are one of the lucky ones to have leftovers. This salad has cranberries, onions, bell pepper, diced up turkey and dashes of salt and pepper. Then it’s bound together with mayonnaise. How you eat it is totally up to you. Put it in a wrap or between two pieces of bread of your choice. The possibilities are really up to the imagination of the individual.
- This salad will feel like you’re having that “dagwood” but with some more healthy choices
- The dried cranberries and celery add a nice splash of color and flavor to an otherwise plain Jane turkey salad.
- Serve with bread of choice, but toast is always so pleasing with this type of sandwich.
“Unless you are incredibly lucky or a perfect plan, you will almost certainly have leftover turkey after Thanksgiving. Just go ahead and plan for a pound of it to go to this salad.”
